Cantaloupe Mozzarella Prosciutto Skewers

Cantaloupe is one of my favorite fruits. That might be because it’s known as a “beauty fruit”. No it’s not a beauty to look at, but it’s packed with beta-carotene which makes skin beautiful! And who doesn’t love beautiful skin especially when you get to eat delicious fruit to go along with it!

This recipe for a cool, light summer appetizer doesn’t get much fancier – prosciutto, basil leaves, sticks = fancy. But with your flowing skin you feel fancy so it all works out in the end right?

A few things about the recipe, first you should only use half of a melon! More to enjoy for later. If you don’t have a melon baller then just cut your cantaloupe into smaller square pieces. Also, be sure to salt the melon and the prosciutto! Salted cantaloupe is delish. If you prefer to miss out on the cantaloupe try watermelon or honeydew! You can even use thinly sliced ham instead of prosciutto and just skip the basil all together, if you need to throw this together fast or save some funds. Some things are wonderful, like prosciutto, but can be quite pricey.
