Every year I try to come up with an easy, creative and tasty way to use the little bit of turkey left from Thanksgiving. I’m thankful that I don’t have a huge amount of leftovers, but I don’t want any of that bird to go to waste.
After the formality of Thanksgiving day, Friday is usually spent lounging around watching sports and spending some down time with the family. I usually spend the day in yoga pants and a t-shirt. So I came up with this easy turkey taco ring to match our informal day.
I’ve also filled the ring with lettuce, cheese and pimentos and served it with ranch dressing for a little different taste. I place the baking pan right on the counter top and everyone serves themselves. My family loves this so much that sometimes I buy turkey meat from the deli in order to make a turkey taco ring, even when it’s not the day after Thanksgiving.
It’s casual. It’s rustic. It’s delicious! It’s perfect for a lazy day.

This looks wonderful. I’m a little sad that I probably won’t have much leftover after today to try a lot of leftover recipes.
