
Are y’all over pumpkin yet? Me neither:) While it’s fall, I’m taking advantage of all the pumpkin-flavored things I can handle. I’ve enjoyed everything from pumpkin muffins to pumpkin pasta. I can’t get enough! There’s just something about the combination of pumpkin and warming spices that is comforting.
Last week, I was in the mood to make chocolate chip cookies. I often get a craving for cookies, so this wasn’t out of the ordinary for me. I happened to have some leftover pumpkin puree in the fridge from a previous recipe. I knew immediately that pumpkin cookies would be the perfect addition and help satisfy my craving!

I’m a huge fan of these chocolate chip pumpkin spice cookies and I think you will be too. Instead of using butter, I opted for coconut oil. What surprised me is that the cookies still have a super buttery texture! Once they bake and cool from the oven, they crisp up really nicely. The pumpkin flavor is subtle, but absolutely wonderful. And, you can’t go wrong with the addition of chocolate! The warming spices top the whole cookie off and take it over the top.
