Goat Cheese & Pesto Flatbread

Hopefully you guys feel like you have started to get to know me over the last few months of posting around these parts. If you didn’t know it already, let me tell you something about me: I love food. I love the actual eating of food but I also love what happens when people come together around the table. I really love food that is simple to make but delicious to eat. Sometimes I’m all about trying a complex recipe, but for every day life, I love easy and quick fixes that still make your palate sing!

 

 

Cue le flatbread. This kind of meal is so versatile (my favorite food-post word) and easy to make. I try to keep a few flatbreads around for days that I don’t feel like having another PB&J for lunch or feel like cooking a big meal for dinner. They’re perfectly light but packed full of flavor. It’s a great last minute meal because it only takes about 20 minutes to cook and only a few minutes to prep.

Some of my favorite meals have three things in common: tomatoes, goat cheese and pesto. And whatdoya know, this flatbread has those ingredients, too! This recipe would work with homemade flatbread or pizza crust or the store bought kind. You could easily switch up the ingredients with whatever you have around the house– it’s a great “catchall” meal. A few ideas: tomato sauce, kielbasa, spinach and parmesan; roasted red pepper and garlic; grilled chicken, sundried tomatoes and feta– the ideas are endless!
