Mexican food is one of my all time favorite foods. If you want to see a happy girl, just sit me down in front of some chips, salsa, guacamole and a margarita over ice with salt. I am particular, and I know what I like. I am also very particular about my love of enchiladas. I have searched high and low for the perfect enchilada where I live.  I have only found one place that that I love the enchiladas, but unfortunately for me it is 45 minutes from my house. I have made it a personal mission to figure out how to make the perfect recipe that uses good authentic ingredients.

I am so happy to share with you a recipe that my brother and I worked on together to get the taste we were looking for. The reason this recipe is so delicious is because of the quality brands we used. When you use authentic ingredients, it makes all the difference.

Believe me, I have used all the enchilada sauces that are more mainstream brands. But they didn’t taste the same as when I go to a good Mexican restaurant. I just figured that I was out of luck and couldn’t duplicate a good enchilada at home.

Until today. I went to Smart & Final grocery store. My mission was to buy some ingredients for a recipe to share with all of you because it is so yummy. I had never been to Smart & Final, but now it’s going to be on my  list of stores to frequent. Smart & Final carries warehouse-sized items without the club membership fee. I couldn’t believe all the items they had in there for such great prices. They had everything from bakery items, to produce and even personal care. I was able to get everything I needed for my Green Chile Beef Enchilada Dip.

This dip is perfect for parties or potlucks. It doesn’t take much time to make, and when shopping for your ingredients at Smart & Final, you will have more than enough to feed a large group of people. With this recipe, you will be the hit of the party and your friends and family will be begging for this recipe.

Montecito and First Street were the brands that I used to achieve the authentic Mexican flavor that I crave.  I used First Street colby jack cheese. I like to grate my own cheese because it melts a lot better than already grated cheese. Another tip is to put it into the freezer for 10 minutes before you want to grate for easy grating. #choosesmart.

  1. I hate when I eat out and have an amazing recipe and then can’t figure out how to recreate it at home. I do a lot of experimenting, especially with Mexican food. I can never get it just right, though. I love this recipe because it seems absolutely doable and delicious. #Client
