We got a little bit of the exotic along with some staples in last weeks produce co-op basket and absolutely loved it. We had potatoes, cauliflower and (surprise!) prickly pear. Oh, and about 15 limes….So what does one do with all those limes? Well you make chicken curry with lime and then treat yourself to a fabulously tart and sweet dessert — lime pie pops!
I’m telling you, these popsicles taste just like the filling of a key lime pie, except they aren’t made with key limes. To this day I still don’t know the difference between a regular lime and a tiny little key lime, but hey it really doesn’t matter because these hit all the right notes of sweet and sour. They are incredibly refreshing as we still battle scorching heat here in Texas. I know most people are busting out their pumpkin everything, but in our home we’re milking the last drops of summer for all they’re worth.

FWIW, I don’t know the difference between lime and key limes either. No matter! These look fantastic. I love coconut milk and can never find enough uses for it. This looks like a great recipe to add to my collection.
They sound delicious! Do you think that we could replace the sugar with stevia? I’m trying to cut out sugar.
Yes! I have never personally used Stevia but I would just add it to the mixture until it hit the sweetness level you want!
