Happy Fall! Now that summer is over and school is back in session, it seems like schedules are filling up. What happens when you get busy? You forget to plan dinner, and you end up ordering take-out every weeknight. While this is fine on occasion, it’s not the best for you budget or for your health.

Slow cookers are the greatest thing to happen to meals since bread met butter. They make life so easy. All you do is throw everything in the slow cooker and then you have a meal ready in a few hours.
This Garlic Ginger Pork recipe is no exception to the whole easy meal thanks to a slow cooker thing. Chop an onion, mince some garlic and ginger, and throw it all into the slow cooker with a few extra ingredients. In six hours, you have pork falling apart in the crock pot and ready to shred.
You can serve this pork with anything. In tortillas for tacos, shredded over lettuce for a salad, served with a side of quinoa or brown rice to soak up the juices, served with buns for a sandwich… whatever works.

It’s slightly sweet thanks to the honey & tomato paste, but the garlic & ginger give it a savory aspect that complements the sweet flavors so well.
If you’re not a huge ginger fan, don’t worry. This isn’t intensely ginger-flavored. At first I was disappointed that there wasn’t more ginger flavor, but after my second bite, I didn’t care because it was sweet and savory and wonderful.
Another great aspect of this recipe is that leftover are delicious for a few days after preparing, and they also freeze well for the future.
