Strawberries and Cream Cookies

I’m a sucker for something cute.

I melt when I see puppies, or babies, or really adorable shoes.  Robb says I think anything small is cute, and that’s kind of true.  Small animals are just cuter.

Except baby swans.  There’s a reason those things are called ugly ducklings.

It’s almost Valentines Day, so the possibilities for cuteness are seriously exponential.  Just think about it… homemade valentines, heart shaped dishes, candlelight dinners… cuuuuute.

Whip out these pink cookies, and fuggedaboudit.  They’re totes adorbs.

(That’s “totally adorable” for those who don’t speak teen.  Although, my teens tell me shortened words like that are totes cray-cray.)

Let me just tell you how easy these cookies are.  While you’re in the baking aisle at the grocery store, pick up these three items and you’re more than halfway there:  strawberry cake mix, freeze dried strawberries, and white chocolate chips.

The thing about cake mix cookies is that they are super fast, super easy, and super soft and delicious.  Plus, they come in lots of flavors.  And since it is basically impossible to bake with strawberries {a fact I openly lament here}, if you want strawberry flavor, a cake mix is one of your very best options.

These are great for summer, or Fridays after school, but for me, they make me look forward to a totally adorable Valentines Day!

  1. These cookies look AMAZING! I think I am going to try to make them for a meeting this weekend 🙂 Have you ever used fresh strawberries? I wonder how those would do! Thanks for sharing this yummy treat!

  2. Madison, it’s really difficult to bake with real strawberries. They have a high water content, and they really don’t bake well. The closest I have come so far is to cook them down into a concentrated puree, then use the puree to make frosting. It was a little time consuming, but that was some really good frosting!
