If anything screams summer/spring, it’s fruit salad. My good friend taught me a twist that adds some zest and freshness. What I love about this recipe is that you use what you have. Add some lemon juice (fresh is always better) so that the fruit doesn’t turn brown and then mint and honey to taste. You will not believe how this takes a simple fruit salad to the next level. And…this is a recipe from my friend who doesn’t love cooking.
There are some spices and herbs I am very familiar with and comfortable using–basil, for example. How could I not be coming from an Italian family? But mint? I have to admit I have to not explored what this simple herb can do and what flavors it pairs best with it. I was happy to step out of my comfort zone…Now if only the Chicago weather would decide that it is Spring. But I don’t have control of the weather like I do with a recipe.
Since much of this is to taste, of course, start conservatively. As my art teacher used to say, a little dab will do you. I hope you enjoy this simple, fresh fruit salad this season!
