Is anyone else craving fall as much as I am?
Fall food is the best! I love this time of year when apples come into season and flavors are all about warmth and earthy, spicy, goodness. Fall food is all about comfort and for me, oatmeal cake is about as comforting as it gets.
You have two options for texture when it comes to this cake. If you like your cake to be completely smooth, make sure you use quick cooking or instant oats. If you like a little bit of texture variation, you can use rolled oats like I did.
Adding sliced apple rings to the cake batter before baking adds a fun surprise to this cake! The apples slowly sink into the batter while the cake bakes.
As much as I love the cake, the brown butter glaze is probably my favorite part. Browning the butter gives the glaze the most glorious, salted caramel-esque flavor. It’s also a cinch to make and would be great on a wide variety of baked goods.
My husband pointed out to me that because this cake has oatmeal in it, it makes a great breakfast. 😉 Enjoy!
