I realize it’s still the dog days of summer, and it’s super hot outside. And that, if you live in the South like me, chances are the weather’s not turning toward fall for at least another month to month and a half.

However, the incredibly hot weather hasn’t stopped me from wanting to eat soup this season.

And yes, I know this is strange, but sometimes, a girl’s gotta have soup! And apparently, any home-y soup is my comfort food of choice these days.

I had a craving for Homemade Chicken Noodle Soup last week… so I whipped up this dish in an attempt to fulfill the craving. Thing is, since it’s been so warm, I didn’t want to turn on the stovetop or the oven to make this meal happen. So I thought, “Let’s bring the crock pot into play!”

The crock pot is a brilliant device, and it’s incredible on several levels: You can put food in it before you leave for work, and dinner is nice, warm and bubbly when you arrive home hours later. AND you can cook a dinner in the crock pot without making your entire kitchen unbearably warm during the summer months.

It’s a win-win situation, y’all.

So I popped in these ingredients for Chicken Noodle Soup… and realized halfway through the cooking process that instead of regular noodles, I wanted to add tortellini to my soup.

It was a good call, and the tortellini adds a nice texture and flavor to this flavorful soup that cooks for at least 6 hours.

  1. I’m totally a fan of soup during the summertime. No idea, but it’s just as comforting to me in the summer as it is in the winter, particularly if I can cook it in the crock pot ; ) Thanks for sharing on Hump Day Happenings!
