Snacking is my favorite meal of the day. I tend to eat a lot of smaller meals throughout the day, so I like to think of myself as a bit of a pro when it comes to snack recipes. I love the typical fruit or even a handful of chips, but preparing a quick snack is even better. The best part about most snacks that take a few minutes of prep work is that they’re usually the best recipes to keep on hand for party appetizers too. These goat cheese stuffed peppers are a versatile little recipe that can serve as a great snack or appetizer.
I’m the type of cook who has a few super ingredients that I love on just about anything. Goat cheese is one of them. I discovered my love for it a few years ago and it’s pretty much guaranteed if I see a recipe with goat cheese in it, I’ll be trying it. And usually falling in love with it. Goat cheese is such a fun ingredient because you can stick to a simple plain goat cheese or go with a mixed goat cheese like garden herb or fig and honey.
I love using these little mini peppers too, especially during the summer. The colors are brilliant and festive, which is perfect for party food or a healthy afternoon snack. These little snack bites take only 15 minutes to prepare but will make y our afternoon so much brighter.
If you live somewhere where the temperatures are already heating up and you prefer a cold snack, you can easily make this as an unheated snack with either goat cheese or cream cheese! The best part about it is you can switch out the type of cream cheese or goat cheese for a totally different flavor!
